You need a postmark (not actual delivery) within the 5 days rescission period. Certified USPS Mail with a date-stamped receipt from the counter is the gold standard for proof of date compliance here in the U.S., but you should inquire at the USPS counter about available alternatives (if any) when sending mail to Mexico and obtaining documentary proof of actual postmark date.
